Cheesecake with bananas and blackberries

I tried a kind of cheesecake without any countertop, only with low-fat sweet cheese, 2 bananas waiting to be picked and blackberries from the freezer, because spring is still coming and my freezer is still half fruity. I used sweetener instead of sugar and I said I was happy with the result and especially with the fact that I was able to eat a slice without regretting being on a diet ....

  • 300 gr sweet cheese with 0.1% fat
  • 3 eggs
  • 3 tablespoons sunflower oil
  • 1 pinch of salt
  • 4 tablespoons sweetener powder
  • 2 bananas
  • 3 tablespoons food starch
  • 1 teaspoon vanilla extract
  • 250 gr blackberries (I had frozen)
  • for decoration: mint leaves and a few pinches of vanilla sugar

Servings: 8

Preparation time: less than 60 minutes

RECIPE PREPARATION Cheesecake with bananas and blackberries:

Pass the bananas with a fork and mix them with the sweet cheese and vanilla extract. Whisk the whole eggs with a pinch of salt and the sweetener powder, until they increase considerably in volume, turn white and stick to the target. Pour the oil over the beaten eggs. Add the cheese and banana mixture over the egg foam, mix with a whisk, lightly, add the starch and continue mixing until incorporated. The movements should be easy, from top to bottom not to remove all the air from the beaten eggs. Pour the composition into a tray with a removable ring, lined with baking paper, and spread the thawed blackberries on top. Put the tray in the oven heated to 170 degrees for 40 minutes, until the composition no longer shakes and is golden on top.

Allow to cool, portion and serve. Good appetite!!!
