  1. Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Meanwhile, in a large saucepan over medium-high heat, saute chopped onion in butter until tender.
  3. Stir in cream of mushroom soup, water and grated cheese. Heat mixture until cheese melts, stirring often.
  4. Add ham, pasta, red pepper and parsley to saucepan; stir.
  5. Stir until heated through, serve hot!

This is a great [almost one pot] meal! I had to do some substitutions based on what I had on hand, but it's a great base recipe! I saw the recipe lacked any seasoning, so I sauteed two cloves of fresh minced garlic with the onion - and increased the onion to one small onion. I didn't have pimiento, so I also sauteed diced green pepper with the onion until soft. I used Chinese Mie noodles (Ramen), low-sodium Cream of Chicken soup (I think this is much better than Mushroom would be!), milk instead of water (much creamier!), sharp cheddar (a little extra) and added ground white pepper and celery salt. I also let the mix simmer on the lowest heat for nearly an hour waiting on my husband, and as I tasted it every 15 minutes, it got better and better. Leftovers will be great! Everyone in the family loved it! I served it with shredded cheese and a sprinkle of parsely on top.-05 Jun 2007

This is an awesome recipe!! I agree ~ it tastes as though you have worked for hours when in reality it is so super easy! The first time I made it exactly as written and received rave reviews from my family. The next time, I played with the recipe just a bit: I didn't have any fresh parsley, so I added in about 1/2 cup frozen broccoli florets (thawed) with the ham and also tossed in a few sliced mushrooms (from a jar); I was a little low on cheddar cheese, too, so I added some Parmesan. It still turned out wonderful. I love recipes that give you some freedom to be flexible (and still taste great!) This one is definitely a family favorite!-09 Mar 2005

I was surprised at how good this tasted with my revisions--skip onions; use low fat marg.; use low fat mushroom soup; reduce water to 1/4 c.; add 1/4 c. dry white wine; add 1/4 c. parmesan. Very flavorful my way. I didn't use the parsley or pimento because I didn't have it. You do need those two ingredients for color purposes only. I'll definitely make this again. Ingredients (serves 2)
250g spaghetti, cooked till al dente
100g ham, cut into small pieces
3 stalks leeks, sliced
200g button mushrooms, sliced
250g grated cheddar cheese
200ml fresh milk
salt & freshly ground black pepper to taste

Instructions
1. Heat a little oil in pan and stir-fry the leeks and mushrooms till tender.
2. Add ham and fresh milk and bring to a gentle boil. Reduce heat.
3. Add cheese and stir till it has all melted. Toss in the spaghetti and season with a little salt and pepper.

How easy can this be? Anything goes with cheese, really. I cooked the same for lunch the next day using penne, chicken, leeks and onions and it turned out great too.

I will never make spaghetti any other way! This was delicious! I added shredded carrot and green pepper in with the onion and meat (beef only as that was what I had on hand). I used a tomato basil sauce in a jar. Followed directions to a T other than that but did use cheddar cheese, feta and Parmesan for the top. Mixed it all together at the end and viola! My kids loved this, as did!

I just recently got my ninja foodi and I LOVE it! This is a great recipe. I used 2 lbs of meat (turkey & beef) instead of 1. I used 32oz jar of sauce and a can of cream of mushroom soup! I used only 1 cup of chicken broth. I added Italian season too. I like to reference others recipes and ideas and play around to make it my own! Thanks for sharing!

Tried this for the first time in the Foodi. Delicious. Came out perfect. My fussy kids loved it. Instead of meat, I used Tofu after thoroughly breaking it up to look like minced meat. Also used, Veggie broth (unsalted) instead of water and fresh minced garlic. Used all ingredients exactly as mentioned in the recipe. Came out perfect.

Preheat oven to 425 degrees F (220 degrees C).

Bake in preheated oven for 35 minutes. Carefully remove foil, then sprinkle with mozzarella and Parmesan cheese. Bake for 5 minutes, or until cheese is melted.

About once a week I put my foot down and I tell Eric, &ldquoYOU ARE TAKING CARE OF MISS PEPPER! I AM LIVING IN THE KITCHEN TODAY.&rdquo Normally, he argues with me a little because well, he&rsquos a man. (Sorry, Babe. I know you&rsquoll be reading this probably later tonight!)

I&rsquom pretty sure he will forget that I called him out after I make something else to eat, so oh well.

Anyway- like I was saying, about once a week I dedicate a good portion of my day to the kitchen. I test out new recipes, I tweak old ones, I sing along to some Miranda. It&rsquos really a perfect day.

Every hour or so food magically appears on the dining room table and Eric walks in like, &ldquowhoa, when can I eat this?&rdquo and I normally make him wait until it is cold and after I take some photos. I&rsquom the worst!

But, he is the most honest with me when it comes to my recipes. Sometimes a little too honest. He&rsquos quite the food critic these days. (hahaha!) Before I actually post a recipe It normally goes through a chain of people. Myself, Eric, and My mom. If we all agree that it is fabulous, then I tell you all that it is fabulous. We build a lovely relationship of trust, and you continue making my recipes, and my heart is happy!

It&rsquos really a wonderful thing!

Okay, now that you know all of that. I will introduce you to one of my latest kitchen creations. Tex Mex Cheesy Chicken Spaghetti. I love me some Tex Mex! I normally don&rsquot make it because it&rsquos something I tend to get when we go out for dinner, but doing this blog now is helping me break out of my little cooking shell.

I still won&rsquot put mushrooms in anything, don&rsquot ask.

How to make Cheesy Baked Penne:

The first thing you’ll do is make a simple white sauce. In one pan, you’ll heat up the milk until it’s piping hot. You can even do this in a large glass measuring cup in the microwave if you don’t want to mess up a pan. In another pan, you’ll melt butter, stir in flour and season it with a little nutmeg and pepper. Then you’ll gradually whisk in the hot milk to create the sauce. It won’t be a thick sauce. That’s okay! Then you can set aside the sauce while you prepare the pasta. You’ll want to cook it to an al dente (barely tender) state.

Next, you’ll combine the cooked pasta, ham, cubed Provolone cheese and Parmesan cheese in a bowl with the sauce.

Then it’s all spooned into a casserole dish and sprinkled with a little more Parmesan cheese. You will notice that the sauce is probably not as creamy as you’re expecting. Again– that’s how it’s supposed to be. It will thicken up as it baked in the oven, and it’s used to further cook the pasta and make it more tender. This Cheesy Baked Pasta will bake for 25 minutes covered, and then another 10 minutes uncovered.

The result is a wonderful, steaming hot, melted cheese, ham and pasta casserole that is so delicious!
