This is a simple variation of a tried and tested favourite. This recipe uses vegetarian sausages and is ideal served with some onion gravy and seasonal veg.

  • 60ml (2 fl oz) vegetable oil
  • 110g (4 oz) plain flour
  • 1 teaspoon salt
  • 3 eggs
  • 1/2 teaspoon black pepper
  • 1 teaspoon horseradish sauce (optional)
  • 300ml (1/2 pt) milk
  • 6 to 8 vegetarian sausages

  1. Preheat the oven to 250 C / Gas 9, or to as high as it will go and allow to heat up for at least 10 minutes. Pour the oil into a baking tin and place in the oven to heat up.
  2. In the meantime, place the flour and salt into a mixing bowl. Make a well in the centre and add the eggs, pepper and horseradish if using. Stir and then beat, adding the milk a little at a time, until the mixture is smooth.
  3. Cut the sausages into quarters (they can be left whole if you prefer). Once the oil is very hot remove the tin from the oven, and add the quartered sausages. Turn the heat down to 200 C / Gas 6.
  4. Bake the sausages in the preheated oven for two minutes. Remove from the oven and pour in the batter.
  5. Bake in the preheated oven for a further 25 minutes or until risen and golden brown. Remove from the oven and serve.

Tip

If you're not that keen on horseradish (I love it and always grow enough to make my own sauce) try replacing it with a teaspoon of English mustard.

Preheat the oven to 240C/220 Fan/Gas 9.

Heat the oil in a small frying pan and fry the sausages until browned on all sides, about 3-5 minutes.

Put the flour in a bowl, season with salt and pepper and make a well in the centre. Crack in the egg and pour in the milk, then whisk until combined and free of lumps.

Preheat a cupcake tray in the oven. When it is hot, drop the sausages into separate cupcake holes. Pour the batter around the sausages and bake for 15-18 minutes, or until golden-brown and risen.

Meanwhile, make the gravy and boil the peas according to the packet instructions. Serve immediately with the toad in the hole.

1 butternut squash (approx 1kg), peeled and chopped in to 2cm chunks
4 red onions, peeled and cut into sixths
1 tbsp fennel seeds
Olive oil
Salt and pepper
3 eggs
115g plain flour
285ml milk
1 tbsp poppy seeds
2 sage leaves, finely chopped
1 sprig rosemary, leaves picked and finely chopped, plus extra sprigs for topping
100g sourdough bread, crusts cut off and torn into 2cm chunks

Heat the oven to 190C (170C fan)/gas 5. Put the squash, onion and fennel seeds in a large roasting tray with three tablespoons of oil, and season. Roast for 30-40 minutes, until everything is really soft and golden.

Meanwhile, in a bowl or large jug, whisk the eggs, flour, milk, poppy seeds, herbs and a good pinch of salt and pepper, until you have a smooth batter. Set aside to rest until the veg are ready.

Once cooked, remove the onions and squash from the oven and add a quarter to a frying pan to make the mustard and ale gravy (see below).

Turn up the oven to 230C (210C fan)/gas 8. Put five tablespoons of oil and the remaining squash and onions in a high-sided, 20cm x 25cm dish, and pop in the oven for five to 10 minutes, so the oil gets really hot and the oven comes up to temperature.

Carefully remove the dish from the oven and, working quickly so the oil stays hot, pour the batter evenly over the hot veg and oil. Top with chunks of bread and a few extra sprigs of rosemary, and bake for 20-25 minutes, until risen, golden and crisp – do not open the oven door in the first 20 minutes or the yorkshire crust will not rise well.

I&rsquom so lucky to not have any food allergies or intolerances. Well, I can&rsquot really tolerate peas&hellip but that&rsquos more just me being fussy than anything else (the teeeextuuuure, yuck). Luckily, nothing actually makes me sick.

But unfortunately, food intolerances seem to be more common than ever, and I&rsquom sure some of you guys aren&rsquot great at digesting dairy (or you know someone who isn&rsquot). If so, I have a really exciting product to tell you about today &ndash a2 Milk.

Let me tell you a little bit of the science behind a2 Milk&trade. Milk contains two different kinds of protein &ndash A1 and A2. It&rsquos usually the A1 protein in milk that causes people problems, but apparently it was human domestication that triggered cows to start producing the A1 protein &ndash some cows are still naturally A1-free. a2 Milk&trade comes from cows who naturally produce only the A2 protein, meaning it&rsquos much easier to digest. It&rsquos fascinating stuff &ndash you can find out more about the A1 and A2 proteins on the a2 Milk&trade website.

A recent study has even shown that switching to a2 Milk&trade led to higher levels of a the antioxidant GSH (which has been linked with many health benefits), compared to drinking regular milk.

I may have a science degree (Psychology), but it&rsquos been a while, so I&rsquoll let you read the study yourself if you&rsquore interested in looking at it in more detail.

Anyway, the point is: a2 Milk&trade tastes just like regular milk, but it could be a game-changer for people who struggle with dairy. I would definitely give it a try if you&rsquove ever had any issues with milk!

I used the milk to make a classic British toad in the hole &ndash basically (vegetarian) sausages cooked in a giant Yorkshire pudding. I livened it up with some roasted veggies for extra colour and flavour. Served with mashed potato and lashings (and lashings&hellip) of gravy, toad in the hole makes a pretty amazing dinner. Took me back to my childhood!

  • Put the oven on REALLY high, e.g. 240C. Put two tablespoons of oil in a big flat dish (ceramic or metal is fine) and put that in the oven to heat up. Leave quite a bit of space between the dish and the top of the oven.

  • Next (this bit has to be fast - you want the oil to stay as hot as possible througout!) whip the dish out of the oven and pour the batter in over the sausages. Re-distribute the sausages so they're roughly evenly spaced and whack the dish back in the oven again pronto!
  • If you did it right, and the oil was hot enough, you would have seen the batter start to rise at the edges as soon as you poured the batter in. Do not stand and gaze at this phenomenon, you need that dish back in the oven. Lol
  • Set your timer again for 15mins, as it may well be done in this time if you have a good fan oven. Other ovens you may need to give it a bit longer. When it's done, your toad in the hole should be a giant and puffy thing of golden beauty. If it comes out a bit flat, don't worry, it will still taste yummy.
  • Bear your dish to the table triumphantly to the ooohs and aaaahs from your assembled diners and serve with gravy and peas or carrots.
