This is a simple variation of a tried and tested favourite. This recipe uses vegetarian sausages and is ideal served with some onion gravy and seasonal veg.

- 60ml (2 fl oz) vegetable oil
- 110g (4 oz) plain flour
- 1 teaspoon salt
- 3 eggs
- 1/2 teaspoon black pepper
- 1 teaspoon horseradish sauce (optional)
- 300ml (1/2 pt) milk
- 6 to 8 vegetarian sausages

- Preheat the oven to 250 C / Gas 9, or to as high as it will go and allow to heat up for at least 10 minutes. Pour the oil into a baking tin and place in the oven to heat up.
- In the meantime, place the flour and salt into a mixing bowl. Make a well in the centre and add the eggs, pepper and horseradish if using. Stir and then beat, adding the milk a little at a time, until the mixture is smooth.
- Cut the sausages into quarters (they can be left whole if you prefer). Once the oil is very hot remove the tin from the oven, and add the quartered sausages. Turn the heat down to 200 C / Gas 6.
- Bake the sausages in the preheated oven for two minutes. Remove from the oven and pour in the batter.
- Bake in the preheated oven for a further 25 minutes or until risen and golden brown. Remove from the oven and serve.
If you're not that keen on horseradish (I love it and always grow enough to make my own sauce) try replacing it with a teaspoon of English mustard.

Preheat the oven to 240C/220 Fan/Gas 9.
Heat the oil in a small frying pan and fry the sausages until browned on all sides, about 3-5 minutes.
Put the flour in a bowl, season with salt and pepper and make a well in the centre. Crack in the egg and pour in the milk, then whisk until combined and free of lumps.
Preheat a cupcake tray in the oven. When it is hot, drop the sausages into separate cupcake holes. Pour the batter around the sausages and bake for 15-18 minutes, or until golden-brown and risen.
Meanwhile, make the gravy and boil the peas according to the packet instructions. Serve immediately with the toad in the hole.

Two carbs, no apologies. If I ever write an album, this will be the title. You can swap up the veg here: most root veg will work well instead of the squash, and leeks will work instead of the onions. Just make sure they are well roasted and not wet, as this will affect the rise of the Yorkshire.

1 butternut squash (approx 1kg), peeled and chopped in to 2cm chunks
4 red onions, peeled and cut into sixths
1 tbsp fennel seeds
Salt and pepper
115g plain flour
1 tbsp poppy seeds
2 sage leaves, finely chopped
1 sprig rosemary, leaves picked and finely chopped, plus extra sprigs for topping
100g sourdough bread, crusts cut off and torn into 2cm chunks
Heat the oven to 190C (170C fan)/gas 5. Put the squash, onion and fennel seeds in a large roasting tray with three tablespoons of oil, and season. Roast for 30-40 minutes, until everything is really soft and golden.
Meanwhile, in a bowl or large jug, whisk the eggs, flour, milk, poppy seeds, herbs and a good pinch of salt and pepper, until you have a smooth batter. Set aside to rest until the veg are ready.
Once cooked, remove the onions and squash from the oven and add a quarter to a frying pan to make the mustard and ale gravy (see below).
Turn up the oven to 230C (210C fan)/gas 8. Put five tablespoons of oil and the remaining squash and onions in a high-sided, 20cm x 25cm dish, and pop in the oven for five to 10 minutes, so the oil gets really hot and the oven comes up to temperature.
Carefully remove the dish from the oven and, working quickly so the oil stays hot, pour the batter evenly over the hot veg and oil. Top with chunks of bread and a few extra sprigs of rosemary, and bake for 20-25 minutes, until risen, golden and crisp – do not open the oven door in the first 20 minutes or the yorkshire crust will not rise well.
Meanwhile, make the gravy and steam some greens. When the toad in the hole is ready, remove from the oven and serve immediately.

Combine the flour, herbs and salt in a mixing bowl. Make a well in the middle and break the egg into it. Beat the egg, drawing in a little flour at a time until the mixture is a paste. Slowly add the warm milk and stir until all of the lumps have gone. Lightly whisk in the water. Set the batter aside for 1 hour.
Heat the oven to 220°C/425°F/Gas mark 7.
Put the olive oil and frozen sausages in a deep roasting tin, approximately 30x20cm/12x8in. Roll them around a little so that they are coated in the oil and put them in the oven. After 5 minutes the oil should be very hot and spitting a little. Remove from the oven and very quickly pour the batter around all of the sausages. Return to the oven and bake for 30-35 minutes, until risen and crispy.
