Breakfast: Granola with coconut and rum

I don't know what it will be like for others at home, but for me, the relationship with breakfast is one of love with naughtiness. I think I said it somewhere on the blog & # 8211 years ago (10-15?) I didn't eat anything in the morning. I would wake up, drink coffee, see my way to college or office.

Since moving to Thailand breakfast has been on and off for various reasons. Lack of ingredients to make it varied and tasty (eating eggs every day does not work) or periods of travel through Thailand or Indonesia, countries where traditional breakfast has nothing to do with what we Europeans know, from our home. Or lazy. Or waking up late.

For about two years I have been working harder and I manage to eat in the morning at least four days out of seven of the week. Not because they say so, that it is extremely important to eat well in the morning (a scientifically proven thing that depends on people and there is no rule), but because it makes me feel good. I guarantee it will be a beautiful day if I start with something good to eat.

I always have the problem of diversification. I get bored very easily, especially since I prefer a sweet breakfast in eight out of ten cases. Or a little. No ham eggs, you know what I mean. Cereals, smoothie, yogurt with nuts and honey, banana bread or muffins. Plus it has to be quick and easy to prepare.

Out of this need for diversification, I came to a time to test various variants of granola. They are simple to make and very good to have at home either for breakfast or as a snack.

Granola, for those who haven't found out yet, are cereals combined with dried fruit and sweetener (brown sugar, honey, maple syrup or whatever else is in the cupboard) and cooked for a while over low heat until golden and crispy.

This version is the only one that worked out for me. Everything I've done before was so and so, but this time and really nailed it! There is no secret in the middle, I think I had very good quality cereals and I hit the sweetness added by fruit and honey. Ah, to be honest, it's a secret & # 8211 moderation. That is, add from each ingredient little by little until you identify the taste you like and there you stop.

What I put in this combination that I love so much:

  • grain & # 8211 from the supermarket, whole grains and no added sugar (wheat, rye, barley, oats). 2 cups, roughly equivalent to what is called & # 8220cups & # 8221 in Americans
  • sunflower seeds & # 8211 about 20% of the amount of grain
  • dried cranberries & # 8211 2 tablespoons tip
  • coconut flakes without added sugar & # 8211 from the eyes, say 5 tablespoons with tip
  • ground cinnamon & # 8211 2 teaspoons grated
  • vanilla extract & # 8211 a tablespoon
  • honey & # 8211 to taste
  • brown rom & # 8211 I used the glass cap as a unit of measurement and I know there were 3 full eye caps involved in the process

I mixed everything well, spread it in a thin layer in the oven tray and baked for 1 hour and a half at 120 ° C. Three times during this time I took out the tray and mixed the cereal to make sure it browned evenly. Speaking of baking & # 8211 and crunchy.

In the end I got a large jar (800ml) of delicious granola. I don't think it's going to last me long. I try to be frugal but I can't promise anything.

Hello dear lusts, today I propose you a healthy and full breakfast called MÜSLI or also called GRANOLA. This is a mixture of cereals with dried fruits, nuts, etc. I offer you my version of MÜSLI but you can vary with nuts and dried fruits, after all use what you have around the house and everything will come out good. Serve muesli for breakfast with yogurt, milk, fresh fruit or whatever you want. I hope you like this recipe and enjoy it. I wish you to continue to have a tasty day and good appetite!

  • 350 gr. - oatmeal (chopped)

  1. Put the oatmeal in a bowl and pour the oil, honey and cinnamon on top. Stir with a spoon until the flakes absorb the honey and oil.

Granola with nuts and fruits

I guarantee without exaggeration that you will always prepare your granola after you try it. The history of this healthy food begins around 1863, and since the late nineteenth century, the name is under the protected geographical indication of Australia and New Zealand, as a product with whole grains, differing from müsli by baking. Granola often appears in the form of a cereal bar, which enjoys great popularity.

You can also prepare this nutritious snack at home from cereal flakes, hazelnuts, coconut, flax seeds and sunflower, in which you can add fresh or dried fruits, which will add flavor and sweetness to the granola. It can be sweetened with honey or quality syrups. You won't even be able to imagine something tastier and healthier for breakfast or for children's packages. The preparation of the granola takes about half an hour, but the mixture obtained will be enough for several portions. With my recipe you will fill this dose with an airtight closure of 1.25 l. At the base of the granola are cereal flakes, and the added ingredients can vary depending on preferences. Add cinnamon, vanilla, chocolate, dried fruit, in short, whatever you like to nibble on. In combination with a good yogurt and fresh fruit, you will enjoy it.

Store the prepared granola in a dry place, in a well-sealed lid.

Training: 30 minutes + 15 minutes for baking * Get: a 1.25 l container

· 3 cups oatmeal (or buckwheat flakes)

· 1 cup ground walnuts

· 1/2 cup chopped almonds

· 1 cup grated coconut

· 2 tablespoons chia seeds

· 1/2 can honey of any kind (or maple syrup, agave syrup, etc.)

· 3 tablespoons full of coconut oil

· a handful of dried apricots (pears)

· a handful of dried cranberries

· thick greek yogurt

· kiwi, currants (seasonal fruits)

1. Put all the dry ingredients in a large bowl (I used a bowl with a diameter of 26 cm) and mix well with your hands. You can leave a few almonds and whole nuts in the mixture.

2. In a saucepan put the coconut oil and honey and melt over low heat. Remove from the heat and mix well. Pour the liquid mixture into the bowl with dry ingredients and mix well, using two tablespoons. Try to cover all the dry ingredients as well as possible.

3. Move the granola on a baking sheet lined with baking paper, spread it evenly over the entire surface of the pan and place in the preheated oven at 170 ° C on the middle rack. Bake for 15 minutes, but during this time mix at least 2 times. Granola should get a golden color.

4. Leave the granola to cool and only then mix the dried fruit in it. Leave the cranberries whole and cut the apricots into small pieces. Pour the cooled and dried granola into jars that you close tightly to prevent air from entering.

Oatmeal falls into the category of dietary foods, being an important source of energy. If you are on a gluten-free diet, replace them with buckwheat flakes. You can adjust the amounts of ingredients, you can't go wrong. For example, I really like the rooster, so I put more, because it is easily lost among the other ingredients. I buy coconut oil from the grocery store.

To the left of this photo is the basic granola, without dried fruit, because it was fresh out of the oven. The second tranche (the one on the right) is ready to enter the oven. I usually bake the whole mixture at once, but I wanted to show you the difference between raw and baked granola. If you choose to coarsely chop walnuts and almonds, you will get a more rustic granola. Pay attention to the edges of the tray - if you have a thinner layer near them, it will bake faster and get a darker color. Stir several times during baking.

· Mix the dried fruit only after the granola has cooled, otherwise it will become sticky

· So that the dried fruits can be cut as easily as possible, let them cool well in the refrigerator

· Buckwheat flakes are easy to digest, being perfect for people diagnosed with celiac disease

· When I have less walnut, I add a larger amount of sunflower seeds, fried have a very good taste

· If you serve it with 10% fat yogurt (which is as thick as cream), the feeling of satiety will persist longer even if you are outside all day, by nature, you will face the challenges with brio

· I like the spicy combination of kiwi and currants, which adjusts the sweetness of granola sweetened with honey I recommend it

· And don't forget to take it on the road - if you have pans that close well, take a portion with you!

Cake with raspberries, granola and honey

When I first made these cakes, I admit that they were very much appreciated by all of me, let alone by me, because as you know or you realized I am a big fan of sweets.
They are not as hard to make as they look and are so delicious that I would be able to eat a whole tray.
Now I make it occasionally because I make my granola and I actually keep it in a hermetically sealed box and when I feel like something sweet I quickly pull a countertop, put something on it and top the granola, or use it in the morning in yogurt for breakfast.
Delicious with a fine top, the raspberry filling that only counterbalances the sweet and the crunchy granola, make the cake with raspberries, granola and honey one of my family's favorites.

For the countertop

  • 100 g of almond flour
  • 180 g butter
  • 150 g brown sugar
  • 360 g white flour
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk
  • A pinch of salt
  • 100 g of honey

For the raspberry layer

  • 500 g raspberries
  • Juice from 2 oranges
  • 4 tablespoons flour
  • 2-3 tablespoons brown sugar

For granola

  • 150 g mixture of oily fruits (almonds
  • 100 g dried fruit (I put cranberries and raisins
  • 250 g oatmeal
  • 100 g butter
  • 100 g of honey
  • 1 tablespoon Cinnamon
  • 1 pinch of salt

Step by step method

The first thing we do is granola: coarsely chop the oily fruits, add the raisins and cranberries. Melt the butter, add the honey, salt and Cinnamon. Combine the fruit with the oatmeal and pour over the honey mixture with butter, leave for a few minutes to incorporate and then bake at 180 degrees for 15-20 minutes until golden brown. Stir occasionally so it doesn't burn.

In a bowl we will put almond flour, brown sugar, milk, honey and vanilla extract and a pinch of salt. Using a mixer, mix the composition until it foams and melts the sugar. We add the flour and with the help of a wooden spoon we will incorporate the flour. Put everything in a tray lined with baking paper, smooth and even out the composition and put in the oven for 20-25 minutes at 180 degrees or until it turns brown.

While the biscuit top is baking, prepare the raspberry composition. In a bowl put the raspberries with the orange juice, flour and brown sugar and mix them lightly. After 20 minutes, remove the top from the oven and pour the raspberry composition, smooth and then the granola. Press lightly enough to set well, place a baking sheet on top and leave for another 20 minutes in the oven. Before removing from the oven for 2 minutes, add the honey and let the time run out.

Remove from the oven and let cool to room temperature and then cut as desired. Not really simple, but tasty and healthy! Good job and good appetite!

How to make granola at home!

Granola is a snack made from whole grains, oats, nuts, honey and a set of additional ingredients. All of these ingredients are usually fried or baked until browned.

Although granola is quite popular among people with a healthy diet, critics say that the additional ingredients used make it high in calories and not very healthy in the end. For example, to make oatmeal easy to eat some of the companies add chocolate flakes, sugar.

The key to choosing a healthy granola is to make sure you choose the right one.

When choosing granola, read the label carefully:

  • make sure you select brands that have a low sugar content
  • low or no fat content
  • Whole grains and granola nuts provide a good source of fiber for digestive tract health. Choose granola that contains nuts and almonds, rich in omega-3.
  • If you eat granola as a cereal, you can opt for a low-fat milk (1.5%) or skim milk to reduce the number of calories.

One way to make sure your granola is healthy is to create one. There are many virtual granola recipes, choose one that it is done quickly and customize it according to your own preferences.

Granola & # 8211 is an equally healthy breakfast alternative, but much tastier than the classic oatmeal or muesli cereals. In fact, granola combines both in a very happy way. The price of the entire recipe: 50 lei

  • A box of oatmeal (500 grams)
  • 3 tablespoons honey
  • 3 tablespoons oil
  • a teaspoon of cinnamon
  • 50 grams of cashews
  • 50 grams of almonds

  • 50 grams of raisins
  • a little butter for the pan.

Method of preparation
In a tray lay a baking sheet, which we grease with butter. Chop cashews and almonds.

In a bowl, mix the oatmeal, chopped walnuts, flax and sunflower seeds, dried cherries. If you prefer, you can add other dried fruits (papaya, dried pineapple, etc.) & # 8211 anything you have in the house is welcome. We'll put the raisins later.

We turn them over in the tray lined with baking paper ready. In a bowl put 3 tablespoons of honey, 3 tablespoons of oil and a teaspoon of cinnamon. Heat the mixture on a steam bath.

Pour the honey composition over the oatmeal with walnuts, then mix everything with a spoon, so that the honey covers the cereals evenly. Put the tray in the oven for 20 minutes. Remove the tray from the roll and add the raisins. Put the tray in the roll for another 10 minutes.

There are several ways we can consume granola: traditionally with milk, in the form of donuts with coconut flakes, or the most delicious, from my point of view, is to put in a glass of natural yogurt, on top of granola, then layer of raspberries with sugar, then yogurt again, then a layer of granola and another layer of raspberries. Good appetite!

Superfood & # 8211 Aronia and two delicious recipes

Today I want to tell you about a wonder fruit, so rich in nutrients that it is also used in the diet of cosmonauts. Ladies and gentlemen & # 8211 Aronia.

Have you heard of this miracle fruit? Have you tried it? I found the dried chokeberry in Matache Square, at Mrs. Rodica's, at the stall with nuts and dried fruits, at the price of 65 RON per kilogram.

I will also show you what delicacies I make with it, but first let's see what properties it has and why it is so praised. Aronia or cinnamon, as these magical fruits are also called, helps in the fight against cardiovascular diseases by lowering cholesterol levels. Aronia fruits have anti-inflammatory properties and are beneficial in inflammatory bowel disease, irritable bowel syndrome, asthma or arthritis. According to Dr. Iwona Wawer, a renowned researcher of chokeberry, flavonoids in chokeberry help fight various forms of cancer by acting as neutralizing agents for oxidizing substances. Aronia also treats disorders of the gastric mucosa. Aronia fruits improve the health of the urinary tract, being even better than cranberries. They reduce glucose levels, being very suitable for those suffering from diabetes. Stimulates blood circulation. They can be an effective natural treatment for stomach problems, including certain types of ulcers. Aronia fruits are a general tonic. This increases vitality, helps to overcome nervous breakdowns and overload, stimulates muscle and bone regeneration, improves metabolism. Find out more about aronia here and here. It seems to me that they taste like pigeons and are tastier eaten after they have been frozen or dried.

Mrs. Rodica told me that autumn, in September for two weeks, brings Aronia fresh. If you want fresh Aronia don't forget to pay him a visit in September.

With these wonderful fruits, I made a smoothie and a delicious granola. I also used them in lemonades. The powder obtained by grinding dried chokeberry fruits is also used in the masks and creams they prepare, as well as for coloring raw vegan candies, cakes and pies.

Aronia smoothie

a cup (250ml) homemade coconut yogurt, find my recipe here

a teaspoon of organic raw yacon syrup

Put all the ingredients in a blender and mix until you get a delicious, homogeneous and creamy smoothie.

Granola with chokeberry

1/2 cup sprouted black quinoa, I prefer black quinoa because it is crispier than white

1/2 cup organic raw oatmeal, I prefer the ones from Petras Bio

2 teaspoons cocoa nibs (crushed cocoa beans)

a handful of raw pistachio kernels

a teaspoon of raw organic coconut butter, I use the one from the Divine Star

date honey to taste

the core of a vanilla pod

a teaspoon of cinnamon

Mix all the ingredients and put them in the dehydrator. Stir occasionally to dry evenly. They will be ready in about 6 or 8 hours. It is very tasty with almond milk, coconut milk or vegetable yogurts, but I recommend you prepare them yourself. The ones on the store shelves come bundled with a number of unfriendly preservatives for health. If you consume them occasionally it is not a tragedy, but frequent consumption will certainly have its say.
