Mini chocolate dumplings

The butter together with the sugar mixes very well, add the yolks one by one.

The flour together with the salt powder, the baking powder and the cocoa are mixed and added over the butter cream, then the cold milk is added. Again it mixes very well.

The composition is transferred to another bowl and in the mixer bowl we will beat the egg whites (here I put two more tablespoons of brown sugar powder, I always do this because the egg whites mix better).

Mix the egg whites in the composition by wrapping.

Grease the forms of the mini cake with oil and pour the composition about halfway (I jumped the horse and put it at about 3/4 and they hit me on the outside resulting in some huge mini-cakes: D)

I baked the cakes at 180 degrees for about 25 minutes ... I did the toothpick test ...

I took them out when they were ready and left them to cool on a grill ... then we beat them well :)))))

Because I wanted to prepare a special dessert for Valentine's Day, I thought I would bring you a wonderful recipe for lava cake or chocolate volcano. This recipe is also known as chocolate fondant and it's actually a chocolate cake with a liquid inside. The cake is baked at high temperature for a short period of time, and in this way the middle remains unripe and therefore will flow.

It seems that the chocolate volcano was accidentally discovered by a French chef. He left the chocolate cakes in the oven for too little time. Thus, the middle of the cakes remained unripe, and when he cut them, the inside began to flow like the lava of a volcano. Wonderful mistake, isn't it? For starters we will prepare the dough. Separate the egg whites from the yolks. Beat the egg whites, then gradually add the sugar. Stir further. Add the yolks, one by one in the bowl with beaten egg whites. Stir constantly.

In a separate bowl sift wheat flour, potato flour, baking powder and cocoa. Pour the mixture obtained into the egg foam. Mix well with a spatula or a wooden spoon.

Wallpaper a tray (32 x 37 cm) with baking paper. Pour the dough into the pan. Bake the dough for about 12 minutes at a temperature of 190 degrees.

Once the top is baked, take it out of the oven and remove the baking paper. Cut the worktop in half lengthwise. We put the 2 countertops on 2 kitchen towels and roll them. Let them cool.

Meanwhile, beat the sweet cream with the powdered sugar. Add the mascarpone cheese and mix well with the mixer.

Lightly spread the cooled rolls. Spread a layer of jam on each piece of dough. Then add half of the cream obtained. Roll the dough again.

We wrap the 2 rolls in aluminum foil and put them in the fridge for a few hours. It would be good to leave them in the fridge overnight. The next day, the rolls are cut into several pieces of about 7-8 cm.Break the chocolate into pieces and put it in a pan. Pour the milk on top and add the butter. Heat the mixture until the butter and chocolate dissolve. Pour the icing obtained over each roll.

If we want, we can even sprinkle a little grated chocolate on top. Put the rolls in the fridge again for 2-3 hours. Good appetite and increase cooking!
