What I like most about this peasant pork soup is the multitude of vegetables and their colors.
- 500 g pork
- 100 g carrots
- 100 g celery
- 100 g peas
- 100 gr green beans
- 100 ml of tomato juice
- 2 bell peppers
- 2 tomatoes
- 1 potato
- 1 suitable onion
- green parsley or tarragon
Preparation time: less than 60 minutes
RECIPE PREPARATION Peasant pork soup:
We wash the meat, cut it into larger cubes and boil it, taking care to take the foam as many times as necessary. Washed and cleaned vegetables are cut into cubes or slices. Saute onions in hot oil, then add the rest of the vegetables (except potatoes) and sauté together.
When the meat is almost cooked, add the hardened vegetables, salt and pepper. Boil them together for 1-2 minutes, then add the potatoes. When the soup is ready, add the tarragon juice, season to taste with salt and turn off the heat. Good appetite!
The soup can be sour with borscht or cabbage juice to taste.
You can also add sour cream mixed with 2 egg yolks.
We can replace the pork with the veal and we can add a bone, it has a special taste.
We can also add the noodles that we boil separately in salted water.
