Lamb shoulder joint cooked in the slow cooker with red wine and lamb stock to make a delicious gravy. I have served this with roast pumpkin, cauliflower and carrots but any veg would be nice and some Yorkshire puds.

  • 1kg lamb shoulder joint
  • 225ml lamb stock
  • 1/2 wine glass red wine
  • 1 pinch dried mixed herbs
  • black pepper to taste
  • 1 teaspoon cornflour mixed with water to thicken (if needed)
  • 1 teaspoon redcurrant jelly (optional)
  • mint sauce to garnish

  1. Turn the slow cooker onto low. Place the lamb joint in the pot. Pour over the stock and wine. Season with dried herbs and pepper (salt not needed as the stock contains salt). Stir and cover with lid. Cook on low for 7 to 8 hours, stirring and turning lamb occasionally.
  2. About 20 minutes before serving, remove the lamb from the slow cooker and keep warm. Add the cornflour paste, stir well and keep lid off the cooker. Turn the heat to high to slightly thicken the gravy.
  3. Carve the meat or pull apart as will be very tender and falling off the bone. Stir the redcurrant jelly (if using) into the gravy, mix well and pour over the lamb. Serve.

Cook's note

Roast pumpkin or butternut squash goes quite nice with this. Simply roast the peeled and chopped pumpkin like you would potatoes in seasoning and vegetable oil

I used a boneless lamb shoulder joint again yesterday. I just put a dozen or so shallots in the s/c along with chopped green pepper - found it in the fridge. I seasoned the lamb with salt, pepper and paprika and put around 200mls lamb stock(knorr) in the mix.I put the cooker on high for an hour then low for 7 hours. The result was tender, delicious lamb and the best tasting gravy ever.-11 Aug 2011

I realise that as summer approaches I have been unconsciously navigating towards the recipes of my Greek childhood.

Lamb is very popular in Greece but I was not a fan when I was little! Thankfully we live to grow, and I have rediscovered Lamb Kleftiko from the perspective of an adult and grown to appreciate this very simple dish.

This recipe is one of the most popular and highly rated on Supergolden Bakes and I am so glad to be able to update it with a killer marinade, oven and Instant Pot instructions PLUS a recipe video &ndash take a look.


Recipe Summary

  • 1 tablespoon olive oil
  • 1 pound cubed lamb stew meat
  • 1 large onion, sliced into petals
  • 2 large carrots, sliced
  • 2 stalks celery, sliced
  • 4 fresh button mushrooms, sliced
  • 1 pound red potatoes, cut into large cubes
  • 6 ounces tomato paste
  • 2 cups beef broth
  • ½ cup beer
  • 3 tablespoons Worcestershire sauce
  • 1 large sprig fresh rosemary
  • salt and pepper to taste
  • 1 ½ cups frozen peas

Heat oil in large skillet over medium-high heat. Add lamb and onions. Cook until lamb is brown and onions are soft, about 5 minutes. Transfer mixture to a slow cooker.

Add carrots, celery, mushrooms, potatoes, tomato paste, beef broth, beer, Worcestershire sauce, rosemary, salt, and pepper stir to combine and close slow cooker.

Cook on High for 7 hours. Add peas and cook an additional 15 minutes. Season with salt and pepper.


FAQs about the Slow Cooker Lamb Shoulder recipe

Do I really not have to brown the lamb before cooking?

No. I think you get a much better result with this dish by browning AFTER cooking when a lot of the fat has already cooked off. The result is crunchy on top and soft underneath – YESSSS!

How do I stop the gravy from being too fatty?

I LOVE my Oxo Good Grips Gravy Separator for this. It makes it a doddle to pour off the excess fat. Otherwise you can do it manually by spooning off the layer of fat on top of the cooking liquid.

Do I have to use a lamb shoulder for this?

No, you can use a lamb leg too but it’s quite tricky to fit a whole one into the slow cooker! A lamb leg may take a little less cooking time depending on the size.

How do I cook this so it’s ready for lunchtime?

Good question! You can either put it on overnight and cook it on low for a little longer (it’s very difficult to overcook lamb shoulder) OR use a timer plug to start the slow cooker overnight. Genius!

Do I have to finish this off in the oven?

The short answer is: no. It just gives a delicious crispy golden glaze. You can serve the lamb straight from the slow cooker and it will still be meltingly tender, it just won’t have any colour.


Ingredients

  • 2 1/2 pounds/1.2 kg shoulder of lamb (boned and rolled and tied)
  • 4 tablespoons vegetable oil
  • 6 cloves garlic
  • 2 sprigs rosemary
  • 3 tablespoons all-purpose flour
  • 1 large onion (peeled and cut into large chunks)
  • 8 ounces/220 g Chantenay carrots (or ordinary carrots, peeled and cut into large chunks)
  • 1 leek (cleaned and shredded)
  • 3/4 cup/175 ml dry red wine
  • 2 pints/1 l lamb or chicken stock
  • Handful flat-leaf parsley (including leaves and stalks)
  • 2 bay leaves
  • 1 tablespoon all-purpose flour
  • 1 tablespoon butter (softened)
  • Sea salt (to taste)
  • Black pepper (freshly ground, to taste)

Slow cooked shredded lamb shoulder

This slow-cooked lamb recipe is perfect for a dinner party and easy to prepare.

This slow-cooked lamb recipe is ideal for simple entertaining as the oven does all the work. It can even all be made a day ahead.

This recipe is packed full of flavour using a mixture of lemon, garlic and mustard.

Don't forget to take the lamb out of the fridge and allow to come to room temperature for an hour so it cooks through evenly.

sprigs rosemary, leaves picked and finely chopped

Small handful thyme, leaves picked and chopped

Finely grated zest and juice 1 lemon

kg shoulder of lamb, bone in

large onions, thickly sliced

  1. Preheat oven to 170°C (150°C fan) mark 3. Mix herbs, lemon zest and juice, garlic, mustard, oil and plenty of seasoning. Make a dozen or so deep cuts all over the shoulder with the point of a sharp knife.
  2. Lay onions and carrots into base of a high-sided roasting tin that just fits the lamb. Place lamb on top and rub over herb mixture. Pour 500ml (17fl oz) just-boiled water around lamb.
  3. Cover tin with foil and cook for 5hr, checking occasionally that the tin isn&rsquot dry (add a splash more water if needed).
  4. Remove lamb to a board (reserve tin), cover with foil and leave to rest for 30min-1hr while you make the gravy.
  5. Turn oven up to 200°C (180°C fan) mark 6. To make gravy, skim fat from the tin and stir in the flour, making sure to scrape up any sticky brown bits from base of tin. Gradually stir in wine. Return to oven for 10min until thickened and bubbling. Carefully stir in stock, redcurrant jelly and some seasoning. Return to oven to reduce down for about 15min, until thickened to your liking. Check seasoning and strain through a fine sieve into a pan.
  6. Reheat gravy if needed and serve with the lamb, shredded with 2 forks.

Get ahead Prepare to end of step 5 up to a day ahead. Once lamb and gravy are cool, cover and chill separately. To serve, preheat oven to 170°C (150°C fan) mark 3. Return lamb to roasting tin and add 200ml (7fl oz) just-boiled water to tin. Cover with foil and reheat for 1hr. Reheat gravy in a small pan over medium heat.


Slow Cooker Moroccan Lamb (Low-Carb, Paleo, Whole30)

Lamb, spices, and a few vegetables are all you need for this simple and healthy slow cooker recipe. Together these ingredients will bring the flavors of Morocco to your kitchen.

I found two lamb shoulder chops from my local grocery store. I usually use a lamb roast but I thought I&rsquod switch it up a bit. If you can&rsquot find lamb shoulder chops then you can substitute regular lamb shoulder, lamb roast, or even a beef.

This is the third recipe I have posted to this blog using my Moroccan spice rub. I use the rub pretty frequently if you can&rsquot tell. As I stated before, I keep a batch of this in my pantry. Here&rsquos the rub again for you:

MOROCCAN SPICE RUB
1 tsp of the following
Ginger
Cumin
Turmeric
Paprika
Garlic Powder
Red pepper flakes
1/2 tsp of the following
Cinnamon
Coriander
Nutmeg
Cloves
Salt
Pepper

Make sure you press the rub firmly into the meat. When it slow cooks it will form a sort of crust on the meat. Similar to bark that you find on brisket or other smoked meats. If you are not familiar with bark, HERE is a good article explaining what it is and why it is so good.

I chose to pan-sear my meat after I rubbed the seasoning on, before I put it in the slow cooker. This is an optional step. I usually don&rsquot take the time to sear my meat beforehand but I&rsquom trying to use my 6-quart stove top browning slow cooker more which allows me to brown directly in the slow cooker, no transferring it from a skillet. I tossed in some carrots and onions but absolutely you can use your preferred vegetables. You can even add potatoes to make this a more complete meal.

3 important notes about this recipe: 1) This is one of those recipes where your house will smell amazing while it cooks, especially towards the end. 2) You&rsquoll know it&rsquos done when the meat it so tender it shreds easily with a fork. 3) The top of the meat will look burnt. It is not. That&rsquos the spice rub crust/bark I mentioned earlier.


Slow Cooker Lamb Shoulder

Toast the fennel seeds in a dry skillet over medium heat until fragrant, 1 to 2 minutes. Transfer to your slow cooker and add the paprika, brown sugar, tomato paste, 1 teaspoon of the salt, and red wine. Whisk to combine, then add the garlic and rosemary.

Heat a large skillet over high heat. Add the oil and heat another 30 seconds. Season the lamb with the remaining teaspoon salt and add to the hot pan. Cook on the first side for 3 minutes or until seared a deep, golden brown. Flip the lamb and cook on the second side for an additional 3 minutes, then transfer the browned meat to the slow cooker, turning each piece of meat to coat with the with the sauce as you layer it in. Top the meat with the onions.

Cover the cooker and cook on high for 2½ hours. Remove the meat from the slow cooker, add the potatoes, then return the meat to the pot. Cover and cook 1 hour longer, or until the lamb is very tender and the potatoes are cooked through.

To serve, mix the parsley, rosemary, olive oil, salt, and lemon zest together in a small bowl. Mound the meat and potatoes on a platter with the herb oil on the side.


Slow Cooker BBQ sauce

Homemade barbecue sauce is so happily and stupidly easy, it’s a mystery why more people don’t make it. And having said THAT (one of my favorite phrases on the planet), I am all in favor of grabbing a bottle of sauce, and there are so many good ones out there—just read the label and. Avoid high fructose corn syrup, and any ridiculously long list of ingredients that are unrecognizable.

So, if you want to take a super short cut, use 3 cups of your favorite barbecue sauce. But if you have a handful of extra minutes, make the balsamic barbecue sauce below. And, because we are in slow cooker mode, not only is the lamb made in the low cooker, the barbecue sauce is as well!

This barbecue sauce gets tanginess and sweetness from balsamic vinegar, which is a really nice compliment to the total richness and savoriness of the lamb. If you wanted to double the barbecue sauce recipe, and save it for a few weeks in the fridge to make another batch of slow cooker pulled lamb (or some else BBQ) you can absolutely do that.
