Bulgarian salad

Like a smart boy I forgot to put eggs and olives, which I had in the fridge.
And yet it was very good.
If you want, add 3 hard boiled eggs and a few pitted olives.

  • - 10 cherry tomatoes
  • - 1 green salad
  • - 3-4 ridichi
  • - 1/2 long cucumber
  • - 1 capsicum
  • - 1 bunch of green onions
  • - 200 g of ham
  • - 200 g of cow's milk
  • - 3 hard boiled eggs
  • - a few pitted olives
  • - 3 tablespoons Cardinal sesame oil, cold pressed
  • - 1 tablespoon vinegar
  • - salt pepper
  • - parsley

Servings: 4

Preparation time: less than 30 minutes


Cut the tomatoes, cucumbers, peppers, egg whites and diced ham. Cut the green onion into rounds. Finely chop the parsley and olives. Put them all in a bowl. Season the salad with salt and pepper to taste and mix everything lightly.

Mix the oil with the lemon juice until it becomes an emulsion and pour over the salad. The egg yolks are grated, through a fine sieve, over the salad. Stir again. The yolk will form together with the dressing a creamy and delicious sauce.
