Method

1 Preheat oven, prepare sheet pan: Place rack in middle position, preheat oven to 450°F. Line a sheet pan with aluminum foil or Silpat.

2 Toss beans and onions with olive oil and salt, roast 10 minutes: Spread the beans and onions on the baking sheet. Drizzle the beans with olive oil and use your hands to coat the beans evenly.

Sprinkle the beans with 1/2 teaspoon of salt, toss to coat, and distribute in an even layer.

Roast at 450°F for 10 minutes.

3 Make balsamic honey garlic mixture: While roasting the beans, combine the balsamic vinegar, honey, thyme, and garlic slices in a small bowl.

4 Brush beans with balsamic honey mixture, return to oven: After the beans and onions have roasted for 10 minutes, remove from oven. Drizzle the balsamic honey mixture over the beans and onions; use tongs to coat evenly.

Put back in the oven and continue to roast until onions and beans are dark golden brown in spots and beans have started to shrivel, about 12-15 minutes longer.

5 Season to taste with salt and pepper.

Transfer to serving dish, sprinkle with toasted chopped walnuts, and serve.

Return pan to medium-high heat. Add remaining 2 teaspoons olive oil to pan swirl to coat. Add green beans cook 2 minutes or until thoroughly heated, stirring frequently. Add onion mixture and vinegar to pan cook 2 minutes or until thoroughly heated, tossing to combine. Remove from heat. Sprinkle with nuts, salt, and pepper. Serve immediately.

Roasted Green Beans

Roasting Veggies. My go-to, always and forever. I know everyone may be excited about their new air fryers but I have to tell you, I am still NOT a fan. We can agree to disagree if you like yours, but the only success I have had with it is potatoes. Baked potato, best I’ve ever had. Fries, phenomenal. Anything else? I’ve not been impressed. Take for instance these green beans.

In theory, many veggies are suggested to be great in the air fryer. A fried, crunchy veggie without the frying. So I thought maybe the green bean might have a shot. I tried it with the whole pound of green beans. Spoiler – they were steamed, not fried. And then I tried it where the basket for my air fryer wasn’t crammed with too many green beans. There’s a fine line between cooking them just the right time before they go from crisp to burnt. Let’s suffice it to say, they were just okay. And the kicker of it all is that if I were to prepare the green beans in this manner for a family versus just myself it’d take forever!! So, please tell me why you love your air fryer. And be honest or send tried and true recipes my way.

Like I said, my default is roasting veggies. It’s simple, flavorful, and a great way to add veggies in throughout the week. Many veggies when roasted only taste good in the moment, but there are a few that will re-heat well. Green beans are one that are better when made fresh. But the bright side? They don’t take that long to cook. As a dietitian my goal is for everyone to get in as many veggies as they can. Roast them. Eat them raw. Air ‘fry’ them if you like. Any way you’re getting more veggies in is a win-win in my book.


How to Season Roasted Green Beans

Honestly, it’s hard to resist eating these green beans straight off the pan. I also enjoy them with creamy aioli on the side, for dipping.

For the delicious sesame variation shown in the top photo, serve your roasted green beans on a serving platter swirled with tahini sauce. Top the green beans with a light drizzle of toasted sesame oil, a sprinkle of freshly toasted sesame seeds, and some torn fresh basil or cilantro.

Or, top your roasted green beans with some simple additions to make them look more enticing at the dinner table. Choose just one or two (ok, maybe three). Here are some ideas:

  • Lemon zest and/or lemon wedges
  • Sprinkle of finely grated Parmesan cheese
  • Small handful of fresh basil, mint, parsley, chives or green onion, finely chopped
  • Light sprinkle of red pepper flakes
  • Pat or two of butter
  • Light drizzle of balsamic reduction or thick balsamic vinegar
  • Toasted sliced almonds

Using fresh green beans

I highly recommend using fresh green beans for this recipe. I find them in the produce section of my local grocery store, or at my local farmer's market. The extra flavor you get from using fresh produce can't be beat.

If you can't find any fresh green beans, I recommend using frozen green beans instead. They will thaw while boiling, though may require an additional minute of cooking time.

If you have canned green beans on hand, simply skip step one (boiling), and continue as written.


So who out there doesn't love some good fresh from the garden green beans? I'm sure most of us can agree on this.

There is just something about fresh green beans roasting in the oven.

Now I can't say that I pulled these from my own garden, but they were really fresh and also Organic.

Since I don't really have the space for a garden with everything in it I would like, I sometimes have to rely on local suppliers to find what I need.

How many of you are lucky enough to have your own garden? Ultimately that would be the way to go. I would love to be able to grow all my own food.

I know it's a lot of work, but I enjoy being outside so I could really see myself getting into this. Oh well, I'll just add that to my list of things I hope to accomplish one day.

If you have some green beans you were thinking of cooking in the near future this is really a simple way to prepare them.

The red onion and garlic mixed with the beans while roasting not only smell delicious while you're cooking them, but the flavors are awesome as well.

You could also do these on the grill and they would be equally as good.

Especially since it's getting close to the official grilling season, although some of you may have already started.

And a Portabella Mushroom Burger would also be great on the grill, along with these Garlic and Red Onion Roasted Green Beans.

Green beans are one of those vegetables that go great with a lot of different foods. So why not include these tonight on your dinner table?

Recipe Summary

  • 1 pound fresh green beans, trimmed
  • 1 pinch salt
  • 4 tablespoons extra-virgin olive oil
  • 1 medium onion, finely diced
  • 1 shallot, chopped
  • ½ teaspoon garlic salt
  • ½ teaspoon soy sauce
  • salt and ground black pepper to taste

Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.

Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.


Place walnuts in a large skillet and cook over medium heat for a few minutes to lightly toast remove and set aside.

Add oil to skillet and heat over medium-high heat. Add green beans and cook for a few minutes or until just starting to soften, tossing frequently. Stir in ginger and cook for 1 minute more .

Add soy sauce, garlic, chili garlic sauce, rice vinegar, peppercorns and sugar cook for 3 to 5 minutes or until some of the excess liquid has cooked off and green beans are saucy and crisp-tender. Stir in green onions and remove from heat.
