If we fast we use water instead of soup

RECIPE PREPARATION Rice Tower:
Finely chop the onion, pepper and mushrooms. Zucchini and eggplant are given through the large grater, the carrot through the small grater and the potato is cut into suitable cubes. Cook the onion, then add the carrot and cook a little longer, then the rice and finally the pepper. After I have hardened them well, add the zucchini, eggplant and mushrooms. Add meat broth and spices. Towards the end, add the potatoes and let all the vegetables boil. Whoever wants can also add tomato juice. Serve both hot and cold.

Wash the rice well until the water is clear. Bring the water to a boil and, when it starts to boil, add it to the rice and salt.

My daughter is a big fan of rice, just like me. I am glad that he came home on vacation and that I can prepare his favorite dishes, including this rice with pumpkin and proumb. A creamy rice that looks like a risotto. I say that it is similar because I did not follow all the steps of preparing an authentic Italian risotto.
I did, however, use a large, round grain rice for risotto (Arborio or Carnaroli), a fried of green onions and garlic, a vegetable soup as well creaming from the end (incorporating a piece of butter and grated Parmesan cheese). For an authentic risotto, a white wine or vermouth is used to extinguish the siofritto, the liquid (hot soup) is gradually added and stirred constantly for 20 minutes to stimulate the starch in the grains to create that typical creaminess. I cheated in the sense that I did not put alcohol at all and that I poured all the liquid in one installment. I ordered lamb chops from Miramax, of course. It is a lamb chop with bone, of New Zealand origin and, I repeat, it is the most fragile lamb! I simply prepared it in a pan, simple and light, with olive oil, butter, rosemary, white wine and garlic. Delicious!
