DeSenvis Cheese Puff - Ingredients
25 g butter
25 g flour
125 ml of cold milk
3 egg whites
60 g DeSenvis cheese, cut into cubes
40 g race parmesan
1 tablespoon white wine
2 tablespoons finely chopped onion
a teaspoon of lemon juice

4 ramekin shapes with a diameter of 9 cm
DeSenvis Cheese Puff - Preparation
Grease the molds with soft butter, cover with flour and leave to cool in the refrigerator.
Melt the butter in a saucepan. When it has melted, add the flour, incorporate and set aside. Add the milk, nutmeg, salt and pepper and mix well, then put it back on the fire and mix continuously until the composition becomes consistent.
Set aside and add the beaten egg yolks, grated Parmesan cheese and finely chopped onion.
