Meatball soup is one of the most appreciated soups in our family, from the smallest to the largest. And it's only good in cold weather, so now. It's a consistent soup, because, in addition to meatballs and vegetables, I always put a piece of head to chest, which gives it taste. So, after a bowl of soup, straight and with some cream and eaten with a slice of healthy bread, you don't need anything else. Maybe just a dessert, after. :)
- 2 slices of beef breast head
- 1 onion
- 2 carrots
- half a celery (root)
- 1 parsnip
- cabbage juice
- Tomato juice
- For meatballs:
- 400 g minced meat mixture (pork with pork)
- 1 small onion
- 2 eggs
- 2 tablespoons rice
- chopped parsley
Method of preparation
For the beginning, I put the head of the breast to boil, I frothed and I let it boil for some time alone, until I added the vegetables and meatballs, to make sure that the meat is well cooked and tender.
Usually I throw the water in which the beef gives a few boils, because it darkens, but this time it was not the case, it was enough to clean the foam formed.
I added the finely chopped vegetables over the meat and let them boil.
In the meantime I prepared the meatballs: I mixed the minced meat with eggs, the rice, onion and parsley finely chopped, I seasoned with salt and pepper, after which I formed the meatballs with wet hands. I made them about the size of a walnut, not bigger, because when it boils, it still swells.
Once ready, I added the meatballs to the soup and let them boil for about 20 minutes. I always take a meatball out of the soup and check if the rice has boiled, if not, I let them continue to boil.
After the meatballs boiled, I added the tomato juice and the cabbage juice, the soup boiled a few more times and I stopped it.
At the end I sprinkled larch and chopped parsley, which give the soup a perfect aroma.
When it's ready, I can't wait to put a bowl of vegetable juice, a piece of meat with bone, a couple of meatballs and greens (again) on top in the bowls. A good spoonful of sour cream, a slice of bread and a pickled pepper, calmer, perfectly accompanies my meatball soup.
