We prepare the form of muffins, putting in each paper for muffins, or .. if you don't have it, grease each form with the oil brush, then sprinkle the flour and shake well, to cover the walls well.
We put in each one a spoonful of the muffin composition, then a teaspoon of jam ..., and another spoonful of the composition.
Put the tray in the well-heated oven, letting it brown nicely for 20-25 minutes on a moderate heat, and if you use an electric oven, 180 degrees is the ideal temperature for them .. :)
It is powdered with powdered sugar ... you can also decorate it with chocolate icing ..

Although it is extremely delicious, fasting cake should be consumed in moderation, as only 100 g of jam contains about 167.6 calories, of which 56 grams of carbohydrates and 16.7 grams of fiber.
Homemade jam and oatmeal muffins
When I want a quick and easy dessert to make but I also want to consume from last year's jam reserve, the fastest way is to make muffins with homemade jam and oatmeal. As usual, this is an invention of my own, of which I am proud. How else, it's just on the blog now, right?
Let me tell you my method: I inspect the fridge, take out almost everything I think I could use for a cake, bring them to the kitchen counter. Then I take a bowl and start adding ingredients to it, mixing well after each one. I usually make super quick and easy recipes out of this, which don't require more than 1 bowl, so I don't have a lot of dishes to wash afterwards.
Buuuun, at this step I have 2 options: either I add the ingredients according to my head and without measurements, because I am not particularly interested in the recipe & # 8230 but the final result. I mean, I don't intend to tell anyone about my sweet deed. On the principle if I didn't pose, it means it didn't exist! This variant happens extremely rarely to almost nothing. But still, it happens.
Option 2 goes like this: as I use the (measured) ingredients, I write them on a piece of paper. When I adjust something, I come back to the notes. This is how a momentary recipe is born in my kitchen! The next step is to be more careful what I do with the sheet on which I wrote down the invention. Not once did I miss them and my recipes were gone!

Blueberry muffins and berry jam
I've tried this recipe before and I really liked it. I stayed with her because she came out every time no matter what filling I decided to make the muffins. But now I tried something different, namely I used soy milk powder to experiment a little. It's a little more convenient than always having milk in the fridge and if I want to make a fry or some muffins then that can save me. Soy milk is not difficult to use, it should only be dissolved in a little hot water and left to cool. It does not have a strong smell or taste so it does not affect the aroma of the muffins. Of course, canned soy milk can be used, especially for those who have given up animal milk. The idea is that it can be replaced and now I know what. I am happy! What I failed to do is use this soy milk powder in pancakes. I don't like how I turn out at all, but maybe I didn't try properly. I will insist. Until then, I enjoy muffins. You not?
225 gr. flour
2 teaspoons baking powder
150 gr. fine sugar
75 gr. melted butter
1 pod of vanilla or 1/2 teaspoon of vanilla essence
1 beaten egg
200 ml. soy milk, powder or canned milk
150 gr. cranberries
2-3 tablespoons of berry jam
Preparation time: 35 minutes
If we use soy milk powder then we heat 200 ml. of water and dissolve 2 tablespoons of powder. Let cool slightly.
In a bowl sift the flour, baking powder, add sugar and mix.
In another bowl beat the egg, pour the melted and cooled butter, milk and vanilla bean core or essence. Stir and pour into the first bowl. Stir again and add the washed and dried blueberries, leaving a few aside. We also incorporate the 2-3 tablespoons of jam. We pour the composition into muffin tins. At the end, we put the remaining blueberries on top of the muffins and we can add a little more sweetness.
Bake the muffins for 25 minutes in the preheated oven or until they become reddish on the surface and fluffy. Leave to cool and serve.
