RECIPE PREPARATION Baked carp with onion and leek:

Washed, portioned, salted cleaned carp is given through white flour and fried in oil

Peeled potatoes, washed and cut into 4, I boiled them in salted water. Boiling takes 15-20 minutes, until the fork enters them easily.

After I placed them on the plate, I sprinkled finely chopped parsley over them.

A cube of butter or a teaspoon of olive oil will give a special flavor.

Without the potato garnish, only with lemon or salad, without oil, it can be an excellent preparation for the Rina diet. With little or no salt, this preparation can be consumed in weight loss diets, or by children and the elderly.

Method of preparation

What would you like to prepare when you buy from the fish market, a live carp, Salonta type (ie without scales) and the Christmas fast gave you the release of fish?

100 ml of dry white wine
200 ml of water (one cup)
1 lettuce
1 tablespoon balsamic vinegar for salad
1 tablespoon olive oil for salad
salt and pepper to taste

Preparation:
For starters, we cleaned the fish. I didn't have anything to clean, because I chose a Salonta carp, which didn't even have a scale on it. If you have chosen carp with scales, please "epilate" it from all scales.
We also eliminated the intestines. We wash the fish well in cold water, until we clean its inside well.
We put it on a paper towel to wipe and remove the water from it. Preheat the oven to 180ºC.
In an oven tray, sprinkle with half the amount of olive oil, add the diced potatoes and finely chopped white onions.

We also prepare the other necessary ingredients: sliced ​​lemon, sliced ​​lemongrass (be sure to remove the "harder" part of the lemongrass and use only the "soft" part of it), sliced ​​ginger, diced tomatoes and their sauce .

Over this bed of vegetables, we put the fish that we have cut from place to place in the meantime. In the notches made, add the lemon, garlic and ginger. We do the same on the other side of the fish. We put the same spices inside the fish. Now we can sprinkle salt and pepper over the fish on both the outside and inside.
Pour the rest of the olive oil over the fish and lightly grease it.
The diced tomatoes from our can, we put them over the fish, we pour the tomato sauce in the tray. Add the mushrooms and a few sprigs of lemongrass. We also pour the wine and water into the tray.

Cover the tray with aluminum foil.
Put the tray in the oven and let it bake at 180ºC for 40 minutes.
After 40 minutes, remove the tray from the oven, remove the aluminum foil and put the carp back in the oven, at the same temperature, for another 15 minutes, to brown and catch a beautiful golden crust.
After it has browned well, remove the carp from the oven and let it rest for 5 minutes on a plate.

After that, we cut it.
The assembly on the plate is very simple: a healthy piece of fish, with potatoes, onions and mushrooms in the garnish, with tomato sauce and wine, in abundance!
Next, we can match the dish with a fresh green salad over which we sprinkled balsamic vinegar and olive oil and salt to taste!

At the beginning of spring, Romanian carp, farmed fish, find a fatter fish, quite tasty (less tasty, however, than the wild carp, caught in the ponds of the Danube or in the Danube Delta).

There are several breeders who deliver fresh fish, most of the year, especially carp and crucian. The taste of the marketed fish depends a lot on the food that the owners of the farm give to fish.

When I have a choice, I buy fresh fish from the Danube & ndash carp, catfish, mackerel, avat, barbel, pike, pikeperch. I also buy farmed trout (I am only in the mountains, with clear, clean water) and Romanian perch (anytime & ndash being my favorite and whenever I find it, being hard to find). I did not try the fresh fish (?!) Brought from overseas and lands & ndash sea bream, sea perch, lufar, etc. I also buy fresh salmon chops or frozen salmon tails. I buy mackerel, sardines, cod, hake and pangasius from frozen fish.

When I got a fishing permit (I bought it this year) I prepare what I catch.

I bought a Romanian carp, fresh, 1.5 Kg, with few scales (mirror carp). I checked it on the eyes & ndash to be clear not white, on the gills & ndash to be a bright red, on the scales & ndash when you press it, to recover as soon as you stopped pressing. I cleaned it of scales and intestines. It was definitely fresh & ndash the basics were whole. I washed the milk well and drained it in a sieve. I washed the fish well with cold water and let it drain in the plate stand.

You can use any vegetable you want, in any combination. Over time, you establish different combinations, depending on the season, to avoid buying from the market, Turkish or Greek vegetables - ndash - looking, but not as tasty.

I used leeks, white onions, elongated, red potatoes. I washed in a stream of cold water and some white mushrooms, fresh (bought from the market), cut in half.


My mother-in-law and father-in-law sent us a large Romanian carp, which we enjoyed until the last bone! I left their head and tail aside for the fish soup, you have already seen the caviar how we prepared them here, and from the rest of the carp we made a recipe to our taste: baked carp with lots of vegetables!

It is prepared very quickly and is a perfect recipe for Sunday meals with the family. these are my dearest, because they are the few moments when we are all together. When I was little I didn't understand why we all had to sit at the table on Sundays, why my mother made that good set of dishes and why we had to behave impeccably in the 2 hours it took to prepare and serve the meal. Now I understand, it's just a little too late, because our family has dwindled over the years and Sunday meals are no longer what they used to be. But let's get over it and get to our fish.

Ingredient:
- a carp (about 4 kg in total, about 2 left at the end)
- a vegetable connection
- 2 pumpkins
- 1 leek thread
- 5 large potatoes
- 100ml olive oil
- 3 cloves of garlic grated
- peel and juice from a lemon
- a teaspoon of: marjoram, thyme, rosemary, parsley, dried basil
- salt to taste
- a cup of water

First I heated the oven to 200 degrees, then I prepared the vegetables: I cut the potatoes and zucchini into cubes (I peeled the potatoes, the zucchini did not), I cut the leeks and carrots into rounds, then I placed them all in the tray, I mixed them, salted them to taste and sprinkled them with half the amount of olive oil. Then I cleaned the fish well and cut it into rounds. I mixed the remaining olive oil with the garlic, peel and lemon juice and the rest of the spices, then I used a brush to grease each piece of fish with this mixture. I placed the Romanian carp over the vegetables, poured water all around and put everything in the oven.

The fish was ready in about 30-35 minutes, so I took it out on a plate and kept it warm, covered with aluminum foil, until the vegetables were done. It took another 30 minutes for the vegetables. It lasted a little longer because of the new potatoes, which are a little harder to make. But I assure you that the wait was worth it! From the given quantities come out about 6 servings, which were very appreciated by each of the diners. You're welcome!

Method of preparation:

Add a cup of water, place the whole tomatoes in place or cut them in half if they are too big. Sprinkle the peeled garlic and leave it whole or sliced ​​and place the tray in the oven.

Bake on medium heat for 20-30 minutes or until the sauce is reduced and the vegetables are almost soft. Serve hot with polenta, mashed potatoes or boiled rice.
