It's been about 2 weeks since I've eaten meat. NO, I will not plead for any particular cause, I have no good reason to do so. It was simply a decision that came naturally, a decision to take much more advantage of greens, fresh vegetables and fruits and especially certain foods that so far I have ignored and have not found their place. to me in the kitchen.

I have bought avocados a few times before, but so far I have not discovered their true value and flavor. I didn't really know how to prepare it apart from the salad :)) but Cristi Roman got me out of trouble with this avocado omelette recipe, absolutely delicious.


Avocado toast

  • 2 slices of multigrain bread
  • 1 medium-sized avocado, well baked
  • 1 file
  • hot red pepper flakes
  • 6 cherry tomatoes
  • extra virgin olive oil
  • sea ​​salt never
  • freshly ground pepper

Method of preparation:

Fry the slices of bread. Cut the avocado in half, remove the core with a spoon, then crush it with a fork and grease it generously on each slice of bread. Then squeeze the juice from half a lime on each slice. Cut the tomatoes in half and place them over the avocado paste. Sprinkle over the red pepper flakes, salt and pepper to taste, then let a small rain of olive oil pass over the preparation. Serve with a smile.

2 Heat a grill pan and fill a pan with three quarters of water in which you can lay the two eggs. You can make toast in the oven if you want because it will fry more evenly, but it is just as good if you sprinkle it with a little olive oil and fry it in a non-stick pan.

3 How to make a perfectly laid egg…

  • For laid eggs, let the water boil until it almost starts to boil.
  • Put a pinch of salt and two tablespoons of vinegar in it.
  • Reduce heat and break eggs into two small bowls.
  • Mix with a spoon in the bowl so that a vortex is created and wait 2 seconds before putting the first egg right in the center. Why? Because if the whirlpool is too fast, the egg white will spread and you will not get an egg laid evenly.
  • As soon as it starts to coagulate, turn the water over again and lay the second egg. Leave them to rest for 3 minutes and test them lightly. Depending on how sticky you want them, they can be ready immediately or in a maximum of 4 minutes from when you put them in water. Keep in mind, however, that they are still hot and can be cooked even after you put them aside, so I recommend you stay close and do not exceed 3 and a half minutes. Remove with a whisk and place on a paper towel.

4 After frying the bread and eggs, the avocado slices are ready. Cut the avocado in half, set the seeds aside and cut the flesh slightly to the desired size. They can be easily removed with a spoon if well baked. And because any avocado recipe requires a splash of lemon, sprinkle the slices immediately with lemon juice to supplement its taste and accentuate its freshness.

5 Finally spread the cream cheese on the toast, place the avocado slices and place the tomato sauce on top. Then place the beaten egg and season with salt and pepper to taste. Optionally you can sprinkle a little dried basil and a few chopped chivas, but a few sesame or pumpkin seeds or a few fresh radish sprouts work just as well.
