This deliciously different cake gets its unique and addictive flavour from caramelised sugar. It is more fussy than it sounds - indeed, this is a simple cake to make that yields extraordinary results!

  • 200g caster sugar
  • 125ml boiling water
  • 250g sifted plain flour
  • 300g caster sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 120ml vegetable oil
  • 7 egg yolks
  • 4 tablespoons water
  • 1 teaspoon vanilla extract
  • 225ml egg whites
  • 1/2 teaspoon cream of tartar

  1. To Make Caramelised Sugar Mixture: Melt 200g sugar in a pan till medium brown. Slowly stir in 125ml boiling water.
  2. Preheat oven to 170 C / Gas 3.
  3. Sift together into mixing bowl the flour, 300g caster sugar, baking powder and salt. Form a well in the dry ingredients and add the vegetable oil, egg yolks, caramelised sugar mixture, cold water and vanilla. Beat with wooden spoon until smooth.
  4. Beat egg whites and cream of tartar in large bowl until they hold very stiff peaks. Pour egg yolk mixture in a thin stream over egg whites. Fold in gently. Pour cake mixture into an ungreased tube cake tin.
  5. Bake at 170 C / Gas 3 for 65 to 70 minutes.

Absolutely. If you are using oil only, don't add any oil under step 3 but add it under step 4 (to the egg mixture).
You cannot bake butterscotch without butter but the cake with oil will still be very delicious.

Apologies for the silly question - I assume this recipe uses Plain Flour rather than Self-Raising Flour am I correct? Since you didn't specify I thought I'd better check. Thanks in advance :) xx

Many recipes on the web share another common theme: there is a whole lot of pastry resting going on! I see the pastry being rested so much, just like puff pastry, it’s mind boggling! The only “resting” I do, is the initial rise of 1 and a half hours.

The recipe I’m sharing with you is the one I learnt over 20 years ago in a kitchen in Brittany. Have I made any changes? Just in the amount of butter and sugar used – I’ve cut it down by 50g (1 1/2 oz). There was always too much fat in the pan after baking, I also didn’t think it needed that much sugar.


Caramel Cake, The Recipe.

I have recently completed a consulting job with Poulet, deli/restaurant with a humble, kitchy interior. Started by Marilyn Rinzler and the infamous Bruce Aidells, Poulet has stood in the same spot since 1979! With the hopes of providing honest, healthful food, with a chicken slant, it is still owned by Ms. Rinzler and manages to makes heaps more food than the diminutive kitchen implies.

A family friend, Ms. Rinzler asked me one day last Spring if I could look at some of their baked good recipes and help her out with advice and suggestions. I began baking 2-3 days a week alongside Lucila Hernandez, Poulet's long term kitchen manager, to test the recipes they had on hand, and re-work them to provide a more viable repertoire of baked goods for their clientele and kitchen staff.

"What is this consulting thing you speak of?"

I get this question a lot. The exact sort of consulting I do depends on what I've been hired to do. It depends on how much time the employer wants me there. Being the overachieving, A-type of employee that I am, I tend to give a little something extra. Throw in some extra information they might not even know to ask for.

At Poulet I tested all the recipes, tasted them with the staff and fixed what needed fixing. I trained and taught Lucila better baking skills and techniques. I created Excel spread sheets for keeping track of what we made, sold and tossed. Seasonal fruit was bought and recipes created around what was at it's seasonal best. "Cake mixes" were made well in advance, so getting a baked good in and out of the much used oven took less time. While spending time re-working recipes I got a feel for who did what when. I learned that if I did not get there before 7 am, the lunchtime dessert could not arrive until after lunch had begun.

At Poulet the most important item is the chicken. And with one oven working overtime, my sweet things stood in a very long line for hot box space!

Commercial cooking and baking is all about streamlining. It's about efficiency. As cooks we are constantly finding way to have our food be sent out of our respective workplaces in the fastest way possible. "What can be done in advance without hurting the end product," could be our tag-line.

Amid the costing-out, training, rewriting recipes, testing and re-testing, writing a newsletter, photographing, spreading the word and tasting, I was able to create some favorites. Because most of my training has been in restaurants, I've spent little time making pretty frosted cakes, pre-packaged puddings and tart slices. So, as many of you know, I had a lot of fun at Poulet creating these sorts of items.

Although right at the beginning I began working on the caramel cake. And because so many of you have requested the recipe, here it is. Of course if you took my if you took my caramel class, you own the recipe and watched it being made!

CARAMEL CAKE with Caramelized Butter Frosting

10 Tablespoons UNSALTED BUTTER, ROOM TEMP
1 1/4 Cups SUGAR
1/2 teaspoon KOSHER SALT
1/3 Cup CARAMEL SYRUP*
2 each EGGS, ROOM TEMP
splash VANILLA EXTRACT
2 Cups AP FLOUR
1/2 teaspoon BAKING POWDER
1C MILK, ROOM TEMP

*Caramel syrup recipe follows

Preheat oven to 350F
Butter one tall 9" cake pan.

1. In the bowl of a stand mixer fitted with a paddle attachment, cream butter until smooth.
2. Add sugar and salt & cream until light and fluffy.
3. Slowly pour room temperature caramel syrup into bowl.
4. Scrape down bowl and increase speed. Add eggs/vanilla extract a little at a time, mixing well after each addition. Scrape down bowl again, beat mixture until light and uniform.
5. Sift flour and baking powder.
6. Turn mixer to lowest speed, and add one third of the dries.
7. When incorporated, add half of the milk, a little at a time.
8. Add another third of the dries, then the other half of the milk and finish with the dries.
9. Take off mixer and by hand, use a spatula to do a few last folds. making sure batter is uniform.

Place cake pan on cookie sheet or 1/2 sheet pan. Set first timer for 30 minutes, rotate pan and set timer for another 15-20 minutes. Your own oven will set the pace. Bake until sides pull away from the pan and skewer inserted in middle comes out clean. Cool cake completely before icing it. Cake will keep for three days unrefrigerated.

CARAMEL SYRUP

2 Cups SUGAR
1/2 Cup WATER

1. In a small stainless steel saucepan, with tall sides, mix water and sugar until mixture feels like wet sand.
2. Brush down any stray sugar crystals with wet pastry brush.
3. Turn on heat to highest flame.
4. Cook until smoking slightly: dark amber.
5. When color is achieved, very carefully pour in one cup of water. Caramel will jump and sputter about! It is very dangerous, so have long sleeves on and prepared to step back.
6. Whisk over medium heat until it has reduced slightly and feels sticky between two fingers.

For safety reasons, have ready a bowl of ice water to plunge your hands into if any caramel should land on your skin.

CARAMELIZED BUTTER FROSTING

12 tablespoons UNSALTED BUTTER
1 Pound CONFECTIONER'S SUGAR, SIFTED
4-6 Tablespoons HEAVY CREAM
2 teaspoons VANILLA EXTRACT
2-4 Tablespoons CARAMEL SYRUP
Kosher or sea salt to taste

1. Cook butter until brown.
2. Pour through a fine meshed sieve into a heatproof bowl, set aside to cool.
3. Pour cooled brown butter into mixer bowl.
4. In a stand mixer fitted with a paddle or whisk attachment, add confectioner's sugar a little at a time. When mixture looks too chunky to take any more, add a bit of cream and or caramel syrup. Repeat until mixture looks smooth and all confectioner's sugar has been incorporated. Add salt to taste.

Caramelized butter frosting will keep in fridge for up to a month.
To smooth out from cold, microwave a bit, then mix with paddle attachment until smooth and light.

The Caramel Cake is also wonderful on it's own. I've also been known to drizzle it with ganache, or serve it with whipped cream. You will be surprised how delicate the crumb is! The caramel not only adds flavor, it contributes to the cake's moist tenderness.


Caramelised apple cake with streusel topping

Heat 1 tbsp butter and 1 tbsp sugar in a large frying pan over medium heat until the sugar starts to melt. Add apples, then cook for about 5 mins, until nicely browned and the sauce is a rich caramel. Leave to cool.

While the apples cool, make the topping. In a food processor or using the tips of your fingers, rub together flour, 85g sugar, cinnamon and cold butter until the mixture is crumbly and only pea-size pieces of butter remain. Stir in 2 tbsp of hazelnuts. Set aside in a cool place.

Heat oven to 180C/160C fan/gas 4. To make the cake, place the remaining butter and sugar in a bowl or food mixer and beat until light and creamy. Add the eggs one at a time, followed by the vanilla extract. Add the flour, baking powder, cinnamon and milk in two goes, alternating between dry and wet ingredients. When the mixture is well combined, stir through the apples.

Grease a 20cm cake tin with removable base and line the base with a circle of baking paper. Spoon in the cake mixture, smooth over the top with a spoon, then sprinkle over the streusel topping. Scatter with the remaining 1 tbsp demerara sugar and hazelnuts. Cook in the oven for 50 mins-1 hr or until a skewer inserted into the cake comes out clean. Leave to cool in the tin for 10 mins, then turn out onto a baking rack, remove paper and cool.


John Whaite's caramelised lemon cake recipe

A simple citrus cake with beautiful caramelised lemons placed on top. What a stunner!

To make this recipe, you'll need 2 x 20cm loose bottom round cake tins, a pastry brush and a piping bag for icing.

Step-by-step

  1. Preheat the oven to 180C/160C fan and prepare 2 x 20cm loose bottom round cake tins, greased and lined with baking paper.
  2. For the caramelised lemon top, place a small saucepan over a medium/high heat and heat.
  3. Add the 100g of caster sugar and let it melt into a dark caramel, stirring until it melts.
  4. Immediately pour the caramel into one of the prepared cake tins, tilting the tin so the caramel spreads across the bottom. Overlap the slices of lemon on top of the caramel to cover the entire bottom of the tin and set to one side.
  5. For the cake batter, whisk together the butter and sugar until pale and fluffy and the sugar has dissolved into butter (this can be done by hand or using an electric mixer).
  6. Add the lemon zest and eggs and beat until well mixed. Sift over the flour and fold in until you have a smooth batter.
  7. Divide the mixture into the two tins, being careful not to displace the lemons. Bake the plain cake in the preheated oven for 20-25 minutes, and the lemon-topped cake for 30-35 minutes .
  8. Immediately invert the lemon-topped cake onto a cooling rack, and let the plain cake cool in the tin for 5 minutes before removing.
  9. Once the cake is cool, for the filling beat together the mascarpone, icing sugar and lemon zest until smooth.
  10. Spread the lemon curd over the plain cake, top that with the mascarpone then add the lemon slice cake on top. Scatter some nibbed sugar over the top if you wish.

LUMBERJACK CAKE

Makes: one 23cm round cake Difficulty: easy

INGREDIENTS:

2 Green Apples, peeled, finely chopped (about 400g)
200g Dried Dates, chopped
1 teaspoon Bicarbonate Soda
250ml Boiling Water
125g Unsalted Butter, softened
1 teaspoon Vanilla Extract
200g Caster Sugar
1 large egg
180g Plain Flour

60g Butter
100ml Full Cream Milk
110g Brown Sugar
60g Shredded Coconut

Preheat the oven to 180 degrees Celsius (160 fan-forces 350F).

In a medium bowl add the chopped apples and dates, bicarb soda and boiling water. Stir so the ingredients are evenly coated in water. Cover the bowl with clingfilm and leave the bowl aside until it’s at room temperature.

In the bowl of an electric mixer beat the softened butter, vanilla and sugar until it becomes thick pale and creamy. Scrape down the sides of the bowl occasionally. Beat in the egg until combined.

Use a spatula to gently stir in the flour, and the apple/date mixtures including the water it was soaking in. Don’t drain the water! Pour the batter into the cake tin.

Check the oven has reached the right temperature, set your kitchen timer for 45 minutes, and place the cake on the centre rack of the oven.

While the cake is baking prepare the topping. In a small saucepan add the butter, brown sugar milk and coconut. On low heat stir them together until the butter has melted and the sugar is completely dissolved. Set aside.

Remove the cake from the oven at 45 minutes. Pour the topping evenly over the cake. Return the cake to the middle rack of the oven and bake for a further 30 minutes. The cake is ready when a skewer inserted in the middle of the cake comes out clean.

Let the cake cool upright in the tin.

BAKING TIPS:

  • Cake will store in an airtight container at room temperature for 2 days
  • This is quite a dense and “wet” cake, almost like a cakey poached Christmas pudding.
  • If the cake isn’t cooked yet but the topping is starting to get too brown, cover the top with aluminium foil.
  • The springform tin lets you remove the cake tin without turning the cake

Upside Down Caramelized Pear and Almond Cake

Vanilla and brown sugar baked pears top this recipe for pear upside down cake. The bottom-turned-top boasts a soft, gluten-free almond cake with a light texture just firm enough to stand up to the caramelized pears.

Each afternoon the kids stomp through the door, their coats draped over their arms, cheeks flushed and their nostrils flaring in the brisk air. Smiles adorn their faces as pink skin soaks up vitamin D during their post-school traipsing.

Our neighbors have opened their garage door, pulling lawn chairs onto the slick black driveway and observing the slow melt as we head into spring. The children celebrate in boots and snow pants and t-shirts, climbing the mounds of snow that line the driveway before sliding down on wet bottoms again and again. Impromptu dinners eaten surrounded by mounds of snow in the fresh air are held in celebration.

I recently purchased a few pears for a client project I am working on, and once the food had been staged and shot, two brown-skinned Boscs remained on the counter. After slicing into one, dipping it gently in lemon juice, and packing it away in a lunch box, there was a lone pear that remained, stolid.

There it sat until yesterday, when it became the focal point for a cake. The sun shining outside, a cake still warm from the oven greeted my coat-shirking bunch. When the door swung open they were hit with the redolence of baking pears and light almond cake coming together in the oven. Browning sugars had caramelized to a high gloss over the baked fruit, and soon there were takers flooding the kitchen, the promise of cake hanging in their nose.
