A New Take on the Tuna Sandwich

All of the familiar flavors of a bahn mi pair beautifully with salty, flaky oil-packed tuna. The classic banh mi combo of jalapeno, mint, and lime juice add tang and brightness, while savory fish sauce ties it all together with an umami punch.

I tried this last night and thought it was a perfect topping for the tuna! I love capers and the simplicity of the recipe made it so easy to make. The only thing I did differently was I pulsed the caper sauce a few times in my blender so that it was like a pesto with some whole capers still intact. I will definitely make again!

Isn't it amazing how so many people have tunnel vision? I may think something is delicious , only to have ten people hate it. It's strange how so many can be so ridgid. If I didn't like something, I might assume I made a mistake in the directions or that it just isn't my cup of tea, but I'm not going to give it a bad rating. Why can't we be adults here?

  1. Bring a large pot of water to a boil.
  2. Turn the heat to low until the water is just simmering and carefully lower in the eggs.
  3. Cook for 7 to 8 minutes (this should yield creamy, not chalky, yolks) and remove with a slotted spoon.
  4. Transfer to a bowl of cold water.
  5. Salt the same pot of water and add the potatoes.
  6. Cook for 15 to 20 minutes, until tender but not mushy.
  7. Right before the potatoes are done, toss in the green beans and cook for 3 to 5 minutes, until crisp-tender. (You can cook the green beans in their own pot, but why waste the water and the energy?)
  8. Drain both vegetables together.
  9. Heat a grill pan or cast-iron skillet over high heat.
  10. Season the tuna with salt and pepper.
  11. When the pan is very hot, add the tuna and cook for 2 minutes per side, until browned on the outside but still pink in the middle.
  12. Remove and let rest for a minute or two, then slice into thin strips.
  13. Peel the eggs and slice in half.
  14. Toss the greens with enough vinaigrette to just lightly cover.
  15. Divide among 4 chilled plates or bowls.
  16. In individual piles around the lettuce, arrange the potatoes, tomatoes, olives, green beans, and eggs.
  17. Top with slices of tuna and drizzle with extra vinaigrette, if you like.

Fresh tuna is an amazing product that takes well to quick pan-searing and high-heat grilling. Trouble is, it can set you back up to $20 a pound. If you're looking to cut the cost of this dinner by about 60 percent (and speed things up a bit), ditch the fresh fish and reach for a high-quality can of tuna instead. If you can find canned or jarred tuna from Spain or Italy (Ortiz is a great brand), make it the new star of this dish. Regardless of the brand, figure half a can of tuna per salad.

It&rsquos hard to go wrong when this meaty protein-packed fish is the star of your lunch or dinner prep. Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread coals evenly over half of coal grate. Alternatively, set all the burners of a gas grill to high heat. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Clean and oil grilling grate.

Dry tuna steaks well with paper towels and lightly brush them all over with oil.

Just before cooking, season tuna steaks all over with salt and, if desired, pepper. Then set over hot side of grill. Cook tuna until first side is well-seared and the fish releases from the grill grate, 1 to 2 minutes. If the fish sticks, try to gently lift it from below using a thin metal spatula or the tines of a carving fork inserted down between the grill grates. Turn fish and repeat on second side.

For an ideal doneness of rare, cook the fish long enough to sear each side, and no longer. You should be able to watch the heat penetrate the fish from each side because tuna changes color so dramatically, from a deep purple when raw to a beige when cooked. Use the side of the fish to gauge doneness: if you want it very rare in the center, the sides of the steaks should still look purple, with the color of the cooked fish just starting to creep in from above and below. If you want it a little more done, let the cooked color creep up a bit more from both sides. We don't recommend cooking tuna steaks beyond medium-rare.


How to make tuna cakes? It couldn't be easier! The detailed instructions are in the recipe card below. The basic steps:

Your first step is to mix the ingredients. Simply mix everything together (except for the oil) in one bowl.

Now cook the patties. Fry the tuna patties in olive oil, about 3 minutes per side over medium heat. That's it!

Recipe Summary

  • Coarse salt and ground pepper
  • 3/4 pound tubetti or elbow macaroni
  • 1 cup panko (Japanese breadcrumbs)
  • 1/2 ounce Parmesan, grated (2 tablespoons)
  • 2 tablespoons plus 2 teaspoons extra-virgin olive oil
  • 1 yellow onion, diced small
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups low-sodium chicken broth
  • 1 1/2 cups whole milk
  • 2 cans (6 ounces each) solid light tuna packed in water, drained and flaked
  • 1 cup frozen peas, thawed

Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.

In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.

Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring frequently, until sauce is thickened, about 8 minutes. Stir in pasta, tuna, and peas and season to taste with salt and pepper.

Transfer tuna mixture to a 9-by-13-inch baking dish and top with panko mixture. Bake until sauce is bubbling and crust is golden, 17 to 20 minutes. Let cool 10 minutes before serving.
