These super easy muffin pizzas are a family and kid friendly answer to dinner - easy to make and great with a green salad. Delicious!

  • 4 white muffins, halved
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh basil
  • 4 large fresh tomatoes, peeled and chopped
  • 8 black olives, pitted and halved
  • 1 tablespoon tomato puree
  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon honey
  • 4 slices mozzarella cheese, halved
  • salt and pepper to taste

  1. Preheat the grill and set the oven rack about 15cm (6 in) from the heat source. Toast muffin halves under grill until golden, about 2 to 3 minutes. Mix garlic, butter and basil together in a small bowl; spread butter mixture evenly onto each toasted muffin half.
  2. Combine tomatoes, olives, and tomato puree in a large bowl; set aside. Whisk together the olive oil, lemon juice and honey in a small bowl. Spoon some of the tomato mixture onto each muffin, then drizzle the olive oil mixture over the top, place a piece of mozzarella on top, and season with salt and pepper.
  3. Return muffins to grill; cook until the cheese has melted, 1 to 2 minutes. Serve immediately.

I wanted to add one more thing to my above review. Next time I make it, I will mix half the garlic with the tomatoes and half with the butter. It is just the right amount of garlic, but would taste better spread evenly throughout the whole thing than just concentrated in the bread.-20 Nov 2009

This is a lovely recipe! So delicious and fresh. I was drawn to this recipe because of the English muffins. I love English muffins. I didn't peel the tomatoes and instead of sliced mozzarella, I used shredded. I also divided the garlic up between the butter and tomato mixtures. We had these for lunch and they came out like awesomely fresh mini-pizzas!-02 Jul 2011

Inspired blend of flavors and mouthfeel: savory, sweet, bright, rich, crunchy, creamy, warm, cool. And just as drescribed, snarfed up just as it was plated. I brought the ingredients (substituting the more traditional french bread slices) to the annual holiday hoo haa to assemble there. Upon arrival I spotted at least five other platters of bruschetta of various types and I almost didn't make these out of concern about waste as the other platters were just being picked at. I persevered and without fanfare plopped these on the groaning board. Within 5 minutes all 36 had disappeared.-14 Dec 2010


English Muffin Pizzas

These dinner-time heroes can literally come together with only 4 ingredients! They are perfect for those busy nights, or hungry afternoons. For more kid approved pizza alternatives try Pepperoni Pizza Grilled Cheese, Mini Margherita Pizzas, and Mini Deep Dish Pizzas.


  1. Ask an adult to preheat the grill.
  2. Also ask an adult to cut the muffins in half to create four pizza bases. Or you could try using different types of bread like crumpets or baguettes instead.
  3. Spread the tomato-based sauce over each pizza base with a table knife.
  4. Tear the ham into small pieces with your hands and share it between the pizzas.
  5. Wash the basil and tear the leaves, before arranging it on top.
  6. Ask and adult to open the can of sweetcorn and sprinkle some over the pizzas. Children can try any other toppings they like, such as sliced mushroom, chopped cherry tomatoes, diced courgette or canned tuna.
  7. Tear the mozzarella into small chunks and add it to the pizzas.
  8. Place them onto the grill pan and ask an adult to put them under the grill for a few minutes until the cheese begins to bubble and turn brown.
  9. Ask an adult to remove them from the grill and allow them to cool.
  10. Serve these fantastic pizzas with crunchy salad.

English Muffin Pizzas

English Muffin Pizzas are a simple weeknight dinner recipe the whole family will love.

These mini pizzas are also perfect party snacks.

This pizza recipe takes less than thirty minutes from start to finish and produces eight mini pizzas.

To make these pizzas, I started by splitting 4 English muffins in half.

I placed the English muffins, cut side up in a single layer on a baking sheet.

I spread pizza sauce on the English muffins.

Then I sprinkled shredded mozzarella cheese on top.

I placed mini pepperonis and diced green peppers on top of the cheese.

I placed the baking sheet in the oven and baked the pizzas until the cheese on top was completely melted and the English muffins were browning around the edges.

I removed the pan from the oven and served the pizzas right away.

These English muffin pizzas are a great hand held snack.

1. Preheat oven to 350 degrees Fahrenheit. Break open your English muffin and then add your pizza sauce.

2. Top with your choice of cheese – we like to use mozzarella especially if you’re making a snowman pizza since you want your snowman to be white!

3. Now add your toppings or snowman facial features! We used black olives for the eyes and mouth. An orange pepper for the nose. Red peppers for the scarf and bread sticks for the arms.


Easy Mini Tortilla Pizzas

Is it too late to talk about what happened last weekend? We’re in Wednesday after all, so I may be missing the boat on this one. But, I’ve finally caught my breath from the excitement and wanted to let you know.

My friends threw me a beautiful baby shower on Saturday. There was champagne, pink cake, good food and lots of laughs… but also some tears! That is, my tears POURING down my face after I found my mom, mother-in-law and sister-in-law standing in the kitchen waiting to greet me. I hadn’t seen them in months, and they had flown in from all across the country just for the big event! It was an unbelievable, unforgettable (and very tear-filled) surprise that had me mopping mascara off my cheeks and crowning my honey Husband of the Year for organizing it all.

The man may not surprise me often, but when he does, he sure gets it right! And for that, he gets a whole lotta praise. And pizza.

The only other thing more abundant than gifts at the shower were the mini treats! I love me some tiny-portioned goodies, after all. They make you feel like you can eat dozens guilt-free. Or while feeling guilty. Either way, you’re gonna eat them. They’re mini and cute and delicious, and in this case, full of cheesy pizza goodness!

Perfect for the preggos in your life, and the men. Everyone wins.

All you need to whip up these wonderful little pizzas is 4 ingredients, plus a sprinkle of parsley if you’re feeling fancy. Feel free to substitute the pepperoni for whatever you like, or add on to it! Just pop a handful of tortilla rounds into your mini muffin tin, sauce ‘em up, sprinkle on the cheese, and add your tasty toppings. Bake until bubbly and golden, and you have an irresistible treat for parties, lunches and fun dinners that call for something different.
