Cauliflower soup

A simple and tasty soup.

  • 4 chicken wings
  • 1 cauliflower
  • 1 carrot
  • 1/2 celery
  • 1 parsley root
  • 1.5 l water
  • 1 cube of chicken concentrate

Servings: 4

Preparation time: less than 90 minutes

RECIPE PREPARATION Cauliflower soup:

Boil the chicken wings and let them boil in half, cut the vegetables into small pieces, break the cauliflower into small bunches and add to the boil together with the chicken concentrate.

When the cauliflower is cooked, stop and you can add green parsley and sour cream.

Rabbit soup

& # 8211 100 ml red wine

The blood collected from the rabbit is put in a saucepan together with the wine, mixing well. Put the pan on the fire and leave it to warm up, thus dissolving the blood vessels. Strain through a strainer with a gauze over it into another bowl.
Cut the meat, wipe well with a clean towel and bring to a boil in a pot. For the soup, the rabbit's head and the front of the body with legs are recommended. When it starts to boil, clean it of foam.
Separately, clean the vegetables, wash and grate them. Peel an onion, wash it and cut it into fish scales. The vegetables together with the chopped onion are added to the meat pot. Add salt to taste and continue cooking until the meat is soft. When the meat is cooked, add the blood with the wine and bring to a boil.
Remove the soup from the heat and add the sour cream.
Serve hot.

it is not complicated at all, as until the cauliflower is cooked and the carrots boil the potato and then you just throw them in the pot, directly from the tray and boil a little more, then pass. yes, you're right it sounds complicated, but when you do it's not hard

Ioana, in the picture with the soup on the plate you can also see the whole bouquets of cauliflower, so you probably put in the blender only a part of the boiled cauliflower to make it puree?

I didn't search the site, do you have a recipe for croutons? I once tried to make croutons, believing that baking slices of diced bread is enough. It was clearly not enough that they did not taste like the croutons from the trade and they had hardened very much

yes, put in the blender only the potato and about 3 tablespoons of soup and cauliflower (without carrots), just enough to give the consistency of the soup. the rest remain in the whole soup

here is a recipe for croutons [link] I used to make it, but more recently I tricked myself and I make them in the pan: I heat a little oil, I add salt, pepper (plus other flavors if you want) and I throw the bread cubes (old obligatory) in a pan and mix quickly (over high heat) until the bread absorbs the oil and then a little more. I think not more than 1 minute, but taste one and see if it's crispy and it means I'm ready. the oil should not be much, otherwise the croutons soften after you take them out of the pan.

I also make the croutons in the pan and they are excellent! I'm not sure if the teflon pan would come out so crispy, but be careful not to put too much oil, not to get "bread in oil"

Very good and for my little girl I added a little fatter yogurt towards the end while it was boiling. we all liked it.

Unfortunately, cup measurements are not to my liking at all. I have mug sizes at home. Can you please tell me how many ml of water you put?

Dana, I always use the classic 250 ml cup. so in this recipe you put 1l of water. and the cauliflower is not very big, the bouquets have entered a baking tray, as seen in picture 1.

Absolutely delicious! For some time my stomach has been making faces, so I only switched to 90% soups ... I didn't know what combinations to make, to be something else. when I found your soup! I just finished building it half an hour ago and. there is only a little left. My partner doesn't have soups at all, but now he's eaten two bowls. It's amazing! I used broccoli because I didn't have cauliflower at hand and I wasn't sure of the result either ... your page and the way you described everything gave me impetus. I present you a recipe for fasting soup, very healthy, with a mix of vegetables and cauliflower. The vegetables used have a low or medium glycemic index, which means that it is a very useful recipe for people suffering from diabetes, plus cauliflower which is a vegetable from the cruciferous group, which contains many nutrients and phytonutrients, rich in antioxidants, calcium , phosphorus, vitamin K, folic acid and vitamin B6. Due to the properties of cauliflower, this soup is very beneficial for diabetics, consuming cauliflower helping to reduce the incidence of heart and cardiovascular diseases in general. Among the vegetables used are celery and green beans & # 8211 both having excellent properties for maintaining blood sugar levels at normal values. This soup is also very useful in diets and for anyone who wants a healthy diet.

For the preparation of the soup we need the following ingredients:

    Vegetables & carrots, onions, celery, parsnips, green bean pods, parsley root (I used a quick-mixed vegetable mixture from the market).

  2. 10 ml of sunflower oil
  3. spices & # 8211. salt, pepper, paprika.

Method of preparation: Peel and wash the onion, then cut into cubes. Put the pan on the fire, put 5-10 ml of oil (1-2 teaspoons), let the oil heat up, then put the onion. Meanwhile, put a pot of water to boil. Cook the onion in hot oil for 2-3 minutes, over low heat, chewing often so as not to burn. Onions should not be overcooked because they are not healthy.
